Barolo is a wine of incredible depth and power, and yet it possesses finesse and elegance. made from 100% Nebbiolo grapes, the Italians revere it under different guises, acknowledging it as "The King of Wines and the Wine of Kings" and "Tar and Roses" for its contrast of intense colour and demanding tannin against delicate, haunting aroma of violets and rose petals. Sicilian Nero D'Avola is a deep garnet and shows ripe, berrylike fruit aromas lent complexity by hints of toast and smoke. The palate features flavours of fresh blackberries, dark chocolate and a little bit of anise. There's sufficient acidity to give it structure, but the overall impression is soft as velvet. Spanish Tempranillo shows the black cherry, raspberry, plum and tobacco notes of the varietal, but the wine tends towards lushness and an overflowing of soft, ripe tannins, rather than bright fuit. Vanilla and spice notes in the oak give way to a beguiling hint of dark coffee on the finish. Medium-to-full bodied, it will drink well under three months and will soften impressively after six months to a year in the bottle. Serve with tapas, like grilled chorizo, rich tomoato dishes like Moussaka or even grilled sardines.

Carmenere, once thought to be Merlot, until growers started noticing different growing and ripening stages in some of the vineyards, was discovered through DNA fingerprinting in 1994. Carmenere, one of the grapes of Bordeaux, France was difficult to bring into full ripeness in Frances cooler climate and has since been removed: however, in Chiles warmer climate it is thriving. Expect the charm of Merlot  and the structure of Cabernet Sauvignon.l Flavours of blackberry, cocoa, tobacco, currant, plum and cherry will dominate the palate.  Carmenere is quickly becoming the signature grape of Chile. ITALY, REGION OF VENETO , AMARONE - $212.33
Amarone is traditionally made frome premium grapes which have been dried or raisined in cool, well ventilated ‘drying room’ or ‘drying lodges’. This causes the grapes to partially shrivel and dehydrate, thus increasing the sugar in the juice and concentrating the flavor components. Although the wine is fermented to a complete dryness and usually aged in oak, the richness gives a slightly sweet impression on the palate. Amarone is among the fullest bodied of Italy ’s red wines, with plenty of ripe black fruit flavours. This full rich styling suggests serving with hard well-aged cheeses (cheddar, parmesan and blue cheeses) with fresh breads, rich winter stews, braised meats, Mexican Mole, leg of lamb, dark chocolate, polenta dishes, spicy sausages, and rich lasagna dishes.
